  • Defrost the turkey completely overnight or under running water.

  • Heat the sesame oil on medium-high heat in large skillet.

  • Add the turkey and crumble it and cook it until about half cooked. Add the garlic and red bell peppers, mix well then continue until the turkey is brown and fully cooked.

  • Add the lime juice, fish sauce, carrots, and red onions. Mix well then add the fresh herbs (cilantro, mint, and basil), mix again then cook for additional 1 - 2 minutes or until you feel the consistency is desirable. It is a good idea to taste the mixture at this point.

  • Turn off heat and set skillet aside.

  • OPTIONAL: In a small cup or bowl, mix the soy sauce with a little bit of sriracha . Be careful that you don’t add too much sriracha. Start out with just a few drops and add some later if you like it spicier!

  • Assemble the cups by scooping some of the cooked ingredients onto a lettuce cup (2-3 leaves) and optionally top off with the sauce mixture and some fried noodles.
