The pre-cut and cleaned spaghetti squash wedges are provided to you in an baking pan for your convenience.

Pre-heat your oven to 450 degrees.

Brush the top of the wedges with the included olive oil. Sprinkle with salt and pepper if desired.

Bake the spaghetti squash for about 50 minutes with the lid on or until tender. Make sure to cook them for a few minutes longer if you feel that they are not yet done. You should be able to easily stick a fork through the flesh of the squash.

Remove the pan from the oven and carefully remove the lid. Do not turn off the oven yet.

Add some of the marinara sauce to the top of each spaghetti squash wedge. Spread the sauce over the surface of each wedge. Be generous when applying the sauce. It's OK if it drips over the sides of the wedges.

Place the pan back in the oven without its lid and bake for an additional 5 minutes or until the sauce is nice and hot.

Remove from oven then add some of the parmesan and mozzarella cheese on top of the marinara sauce on each wedge. You may choose to do only one of the cheeses or both.

Add the pan back in the oven, again without the top, and bake for 1-2 minutes or until the cheese starts to melt.

Remove from oven and allow to cool down a bit before serving.

Combine the spring mix, grape tomatoes and dressing in a bowl and mix well. You may alternatively drizzle the dressing on top of each individual salad plate.

We are providing the broccoli florrets in a microwavable container. These make a nice healthy side serving to go along with the spaghetti squash wedges and salad. You can steam them using your own preferred method or follow the steps below.

Add about 3-4 tablespoons of water to the container.

Cover with the lid but leave one corner popped open.

Microwave on high for about 2-3 minutes.

Carefully
remove the lid and check to see if broccoli is tender yet still a bit crispy. If they're not yet done, cover again and microwave again for another 1-2 minutes.
